
The first time I went through my grandma’s recipe box, her fresh strawberry pie immediately stuck out to me. It was the first recipe of hers that I made, and it was a keeper. This refreshing pie is best served on a perfect summer day with whipped cream. If you’re my husband, it is best served on any day of the year, including his January birthday. This is the dessert Alex requested for his 31st, and I thought I would share the recipe.
Since that first time making it, I have made some modifications that turned it into one of my most famous desserts. The most important modification was swapping the graham cracker crust for a shortbread crust. The shortbread cookie flavor and texture just pairs so well with fresh strawberries and strawberry glaze.

I don’t know why the Lorna Doone brand cookies are so perfect for this crust, but they are. I have tried other brands, but they didn’t work as well.

Anyway, this recipe is not going to test your culinary skills. It is so easy to make and your strawberry-loving guests will thoroughly enjoy it.
