I remember when my oldest son was eating EVERYTHING. One of my coworkers said, “Yeah, I remember those days. My kids would eat whole avocados, and now they only eat chicken nuggets.” I didn’t take her seriously. I really thought I was doing something special over at the Bireline household, but now my oldest won’t even eat chicken nuggets; it’s a constant demand for sour patch kids or pancakes.
My youngest isn’t quite two yet and will still eat anything. While big brother and dad went out ice fishing for the day, I figured it was the perfect time to make a more “interesting” lunch than usual.

Beau and I share a love for soup. I decided to make a recipe from Cookie and Kate I’ve been looking at for awhile. On my life, it is one of the best things I’ve ever tasted. The only modification I made was switching out the vegetable stock for chicken stock (I ALWAYS have chicken stock in my pantry).
It’s so easy. You simply toss a head of cauliflower with olive oil, sprinkle it with salt and roast it for 30 minute for so in a 425 degree oven.

When the cauliflower is on its last five minutes, sauté a red onion and garlic. Add four cups of chicken stock, the roasted cauliflower, and simmer for 20 minutes.
Transfer everything to your blender (I have a Vitamin) and add 2 tablespoons of butter, lemon juice, and a pinch of nutmeg.

Turkey and Raspberry Jam Panini

Soup just begs to have a sandwich with it. I got out the panini press and made a turkey and raspberry jam panini. This was inspired by the turkey steak and raspberry sauce I get from our local steakhouse The Redwood.
Homemade Ice Cream
What’s a special lunch without dessert. I had some heavy cream and whole milk left over and needed to use it! I threw my KitchenAid ice cream attachment in the freezer, and when we were ready, homemade delicious ice cream was a breeze!
Reu and Alex got back from ice fishing, and Reu got to enjoy a little ice cream.

For me, I made a carmel milkshake!
