Easy Thai Ramen

I could eat Asian food every single day of my life. Both of my boys love Ramen, so we always have a case ready to whip up at any time. Now, while my sons love plain Maruchan Chicken Noodles, I like to upgrade my bowl. I’ve tried a lot of different ingredients, but Thai garnishes are my favorite.

Step One: Prep your garnishes:

  • Fresh lime wedges
  • Cilantro
  • Basil
  • Sliced radishes
  • Chili oil
  • Soft-boiled egg

Step Two: Make a creamy Thai coconut blend

  • Full fat coconut milk (The kind from a can)
  • Ramen seasoning pack
  • Red pepper flakes
  • Lime zest
  • Thai red curry paste

Before I cooked my noodles, I soft-boiled an egg. It was so simple: bring one inch of water to a boil, place your egg in the pot, cover it and boil for 6 minutes. If you like your egg nice and runny, put it directly in an ice bath to avoid it cooking any further.

Step Three: Cook your noodles-Bring two cups of water to a boil. I added sliced tomatoes and fresh spinach to the pot with the noodles and boiled for three minutes.

Step Four: Put it all together-After the noodles are cooked to your liking, add in the coconut milk mixture. Place in a fancy bowl, garnish with your fresh herbs, vegetables, and egg before putting some chili oil in. Enjoy!
